Recipe for Strawberry Dream Cupcakes

Recipe:
Makes 16 large cupcakes

Ingredients

For the cupcakes:
6oz Margarine
6oz Caster Sugar
3 Eggs
6 oz Self Raising Flour
6 Strawberries, Pureed
100g Bag of white chocolate chips
1 tsp Baking powder
1 tsp Vanilla extract

For the topping:
6oz Margarine
80z Caster sugar
1/2 tsp strawberry flavouring (pureed strawberries would cause the icing to seperate)

Decorating suggestion:
16 Strawberries
100g bar of white chocolate

Method:

The Cupcakes:
1. Preheat oven to 180c.
2. Place 16 large cupcake cases in a cupcake tin.
3. Combine all the cupcake ingredients in a bowl with an electric whisk.
4. Evenly divide the mixture between the cake cases,
5. Bake in the oven for 20 minutes. The cakes should be spongy to the touch when cooked.
6. Leave to cool

The Topping:
1. Combine all the topping ingredients in abowl with an electric whisk.
2. using a piping bag with a star nozzle, pipe a swirl onto each cupcake.

Decoration:
1. Melt the white chocolate in a heatproof bowl over a pan of simmering water.
2. Dip half of each strawberry in the chocolate and leave to set on a wire tray.
3. When the chocolate has set on the strawberries, place one chocolate coated strawberry on the top of each cupcake.
